Here are pictures of other stuff I made this week.
My son did not want the baby Kale salad, I enjoyed it though.
He likes meat so he enjoyed the beef stew and the Tilapia. He doesn't like sauteed onions because they sort of slide and are long, but he eats them if I ask him to.
You can eat this stuff with a tiny bit (maybe a couple of tablespoons of rice) or I made some creamy carrot soup (without any cream of course, the carrots were the creamy bit) and served the main things with the soup.
Its filling, healthy and carb free.
Stew
Beef, carrots, parsnips, onions, salt, garam masala, turmeric, fresh ground ginger and garlic. I just cook everything together in a pressure cooker with some olive oil.
Salad Dressing
Olive oil, grainy mustard, pumpkin seeds, salt, lemon juice, honey. Those are coronation grapes I had lying around the fridge that I just threw in there. The organic baby kale came in a box.
Tilapia
The onions and tomatoes saute in a pan with salt, pepper. The fish I soaked in marinade for a few hours. Marinade was mustard, maple syrup, salt, pepper, lemon juice, fresh ground ginger and garlic, cumin. Then I seared it in some hot oil in a separate pan and placed it on top of the onions and tomatoes and cooked it through with the lid on. I didn't have any other herbs so I just thew some mint on it, but I would have preferred some dill or coriander.
